Salmon over rice, greens wilted in
The fish steams on top of the rice while it cooks. One button, one pot, ~30g of protein.
Serves 2 · 5 min hands-on · ~40 min in the cooker
Ingredients
- 1 cup rice, rinsed
- 1¼ cups water
- 2 salmon fillets, salted on both sides
- 2 big handfuls of spinach (or any greens that wilt)
- 1 tbsp soy sauce, 1 tsp sesame seeds
- Olive oil to finish
The whole method
- 01
Rice, water, salt into the pot.
- 02
Lay the salted fillets skin-down on the rice. Press cook.
- 03
When it clicks: pile the spinach on top, lid on, five minutes — the steam does the cooking.
- 04
Flake the salmon into the rice, fold the greens through, soy and sesame over, olive oil last.
About 30g protein per serving. Frozen fillets work — add a splash more water and let it sit ten minutes at the end instead of five.
