Across 9,569 US adults, people who cooked dinner 6–7 nights a week ate about 140 fewer calories and 16 g less sugar per day, and had less than half the fast-food meals of those who rarely cooked (1.6 vs 3.4 per week) — but this is cross-sectional, so it can't prove cooking caused the difference.

In 11,396 UK adults, eating home-cooked meals more than 5 times a week (vs fewer than 3) went with ~98 g more vegetables and 62 g more fruit daily, higher plasma vitamin C, and 28% lower odds of being overweight — again cross-sectional, so cause and effect can't be separated.

Following ~100,000 US health professionals for up to 26 years, those eating 11–14 home-prepared lunches and dinners a week had a modest 14% lower risk of type 2 diabetes than those eating 0–6 (HR 0.86, 95% CI 0.81–0.91), plus slightly less midlife weight gain.

In a tightly controlled inpatient RCT (n=20, crossover), people offered ultra-processed meals ate 508 more calories a day and gained 0.9 kg in two weeks, while the same people lost 0.9 kg on matched unprocessed meals — the causal mechanism cooking at home exploits, though the trial tested the food, not the act of cooking.

Where this falls down
Almost all the outcome evidence is observational: people who cook most of their meals also differ in income, time, and conscientiousness, and the 28%-lower-overweight and diet-quality numbers are cross-sectional snapshots.
The only true RCT (n=20, 2 weeks) tested ultra-processed vs unprocessed food, not cooking itself. The prospective effect on diabetes is real but modest — 14% relative risk reduction over decades, not a transformation.
And cooking only helps if what you cook is actual food; reheating ultra-processed ingredients at home doesn't count. The honest price isn't money — home cooking usually saves it — it's 30–60 minutes a day, nearly every day, indefinitely.
