Lentils and rice, the workhorse

The cheapest real dinner we know: lentils, rice, and whatever frozen vegetables are in the drawer.

Serves 3–4 · 5 min hands-on · ~50 min in the cooker

Ingredients

  • ¾ cup rice + ¾ cup red lentils, rinsed together
  • 3 cups water
  • 1 tsp turmeric, 1 tsp cumin, good pinch of salt
  • 2 cups frozen mixed vegetables
  • Olive oil or butter to finish; yogurt on the side if you have it

The whole method

  1. 01

    Rice, lentils, water, spices, salt into the pot. Stir once.

  2. 02

    Press cook. It will look like too much water — it is not.

  3. 03

    When it clicks: stir in the frozen vegetables, lid on, five minutes.

  4. 04

    Finish with the fat. Yogurt alongside if it's there.

Vegetarian, about 20g protein and a real dose of fiber per serving — and roughly two dollars a bowl.
