Lentils and rice, the workhorse
The cheapest real dinner we know: lentils, rice, and whatever frozen vegetables are in the drawer.
Serves 3–4 · 5 min hands-on · ~50 min in the cooker
Ingredients
- ¾ cup rice + ¾ cup red lentils, rinsed together
- 3 cups water
- 1 tsp turmeric, 1 tsp cumin, good pinch of salt
- 2 cups frozen mixed vegetables
- Olive oil or butter to finish; yogurt on the side if you have it
The whole method
- 01
Rice, lentils, water, spices, salt into the pot. Stir once.

Press cook. It will look like too much water — it is not.
- 03
When it clicks: stir in the frozen vegetables, lid on, five minutes.

Finish with the fat. Yogurt alongside if it's there.
Vegetarian, about 20g protein and a real dose of fiber per serving — and roughly two dollars a bowl.
